Crunchy Kale

A little inspiration for you to start your week....

And now for a quick, healthful treat to keep you moving onward and upward this week...

The reasons to eat kale are numerous, but I think its calcium content is of particular interest. Those who are new to Paleo often ask where to get your calcium if you give up dairy. Well my fellow Paleo laborers - kale is an excellent source of calcium which is said to be better absorbed than that from dairy! And you've probably heard it before, but I'll say it again - kale chips are truly delicious!

This recipe features a time saving shortcut - pre-washed greens. I've made Kale Chips in the past but it was a laborious process trying to trim the stems and tear the leaves and ended with me usually overcooking them.  But I finally have the recipe down pat! Don't you just love those glossy green beauties? My beau and I shared the entire batch in less than 30 minutes - meaning we shared an entire container of kale in one sitting. This is a perfect, portable snack for anyone in your life.

Crunchy Kale

Prep Time: 5 minutes
Cook Time: 1 hour

  • 1 container organic baby kale, pre-washed
  • 2-3 tablespoons olive oil, coconut oil, or other preferred cooking fat
  • sea salt, to taste
preheat oven to 200 degrees F
place kale in large bowl
pour olive oil over kale and mix well with hands to ensure each piece is completely covered
place kale in a single layer on foil lined baking sheet - I had enough kale to cover 3 baking sheets (1 large, 1 medium, 1 small) and cooked them all at once
sprinkle with a little salt
place in oven and cook approximately 60 minutes until kale fully dehydrates and becomes crispy
