I accomplish this through many methods - slow cookers, pressure cookers, semi-homemade ingredients, and quick microwave dishes, to name a few. With this in mind, I've decided to create Minute Mondays where I will share a recipe each Monday that literally takes minutes from start to finish. I hope you enjoy the first installment below...
Looking for a Paleo approved treat but have no time to cook? My minute cakes are the answer. Quick and easy desserts are a favorite in our house and I love coming up with different variations to share with you.
This beauty comes together in minutes, cooks in seconds, and is sweetened with just a touch of all natural, 100% maple syrup.
Paleo Minute: Flourless Chocolate Cake
Prep Time: 4 minutes
Cook Time: 1 minute
Ingredients (serves 2)
- 1 egg
- 1/2 tsp vanilla extract
- 1 tbsp coconut milk, nut milk, raw milk, or water
- 2 tbsp cocoa powder
- 1 tablespoons maple syrup
- 1/4 tsp baking powder
- 1 tsp coconut oil or butter (I used expeller pressed coconut oil to reduce the coconut flavor, but you could always play that up to make it more coconutty)
Melt coconut oil and grease 2 mugs or ramekins well
In a separate bowl, whisk together egg, vanilla, coconut milk (or other liquid), then add cocoa powder and baking powder and mix until smooth
Pour equally into oiled mugs and stir to remove any air bubbles
One at a time, place in microwave for ~15-30 seconds (it is done when it has risen half way, careful not to overcook)
Remove from microwave and turn onto a plate to remove
Top with fruit, whipped coconut cream, chopped nuts, or any drizzle of your choosing
