21DSD Bacon Chicken and Detox Spiced Mousse

 
I decided to try some of my fellow Paleo blogger's 21-day sugar detox recipes this weekend. With The Paleo Professional in mind, I kept it to some easy but tasty recipes that don't require a lot of hands on time. 


 
For Sunday dinner, I made the Paleo Parent's Bacon Chicken over Cabbage. Wow, is this easy and delicious. You can find the recipe on their site, but basically you buy some shredded cabbage and throw it in a baking pan, then top the cabbage with a whole chicken, stuff some lemon and onions in the chicken and lay strips of uncooked bacon over the whole top of the chicken. Bake for 90 minute and you have a tasty meal.
 
I had a little snafu with this chicken. If you are a frequent reader, you'll know that I buy a lot of organic rotisserie chickens from the grocery store so it's not often that I cook my own chicken. That was pretty evident when I discovered that I had cooked the chicken upside down! Oops. But I think I'm on to something - the normally dry white meat was so juicy!
 
 
No Sunday dinner is complete without dessert, so I gave PaleOMG's detox carrot cake pudding a shot. I had what I thought was a brilliant idea though - I bought the yellow (white) baby carrots instead. Is this not a beautiful looking treat? Surprisingly, there is nothing carroty about this dish and the flavor is wonderful. Again, prep is minimal: boil some carrots, throw them in the food processor with some spices, coconut cream and sunflower butter and voila.
 
To kick it up a notch, I went ahead and made my detox mug muffin (with no apples this time) and topped it with this fluffy mousse. This was a legit treat, detox or not.

  1. I am so happy that you posted that chicken recipe from Paleo Parents. Without you I would have never known about it and that would have made me very sad. Sounds amazing!
