Paleo Parties: Surprises, Sweets, and a New Decade

I turn 30 tomorrow. I don't know if I should be joyous or mourn the end of this incredible decade called my 20's (maybe a little of both?)! But I do know that I have such an amazingly blessed life with so much to be thankful for.
One thing I'm thankful for is the very special treat I was given last weekend... My family drove all the way from Maine and Virginia for a surprise visit to celebrate my special day! It was one of those really great surprises where the thought of them visiting had never even crossed my mind. It literally brought tears to my eyes. And to boot, my mom made me a Paleo birthday cake. Remember how she is giving Paleo a try?
It really doesn't get better than that - great company and great eats. The 6 of us had a very special, memorable weekend....

Paleo Birthday Cake
  • coconut flour
  • cacao powder
  • baking soda
  • sea salt
  • eggs
  • coconut oil
  • maple syrup
  • coffee or water (mom used water)
  • vanilla extract

Coconut Cream Cheese Frosting
I could have eaten this stuff by itself!
  • 1 cup shredded unsweetened coconut
  • 1 tablespoon pure vanilla extract
  • 1/3 cup pure maple syrup (mom used 1/3 cup, recipe calls for 1/2 cup)
  • 16 oz full fat cream cheese (organic preferred)
  1. Bring cream cheese to room temperature
  2. Blend cream cheese, maple syrup, and vanilla in a mixer
  3. Stir in coconut
  4. Frost while room temperature - otherwise refrigerate and then sit it out for a bit before frosting
If you are not accustomed to Paleo treats, be advised that they are more filling than their non-Paleo relatives. Smaller portions usually result - I am still enjoying leftovers!

(I added a 1/2 teaspoon baking powder and mixed it all in my new mixer from mom!)
Dinner on Saturday
(we were so full we skipped lunch!)
Lots of flavorful grilled meats - steak, pork, chicken, burgers, hot dogs and more!
Grilled zucchini and yellow squash seasoned with olive oil, garlic, and italian seasoning

Breakfast on Sunday

Lunch on Sunday
We celebrated his cousin's birthday at SOB's in NYC. It was a 3 course menu and they were very accommodating to my requests.
Appetizer: garden salad with balsamic and olive oil
Entree: steak and eggs with maduros
Dessert: coconut gelato served in a coconut shell - beautiful presentation!
Special occasions are a perfect reminder of all that is good in life. I shouldn't be surprised by the outpouring of support I have already received from friends, family, and the online community, but seeing it in action is especially notable. My family has embraced this blog, the changes I have made in my life and even enthusiastically ate Paleo with me this weekend. Thank you mom, Mark, Julie, Pat and Nick. You all mean so much.
